Congratulations to Chef Dieter Samijn on his victory at D’Artagnan’s Fifth Annual ‘Cassoulet War’ last Monday evening in New York City. Chef Dieter competed amongst 30 distinguished chefs from around the country, before an esteemed panel of judges which included chefs Elizabeth Falkner, Sara Moulton, Christian Constant, and the legendary André Soltner of Lutèce.
Congratulations Chef Dieter, our wine team is continually inspired by the work you and your kitchen team puts in, and the passion you bring to your roles in the restaurant. Without a doubt, this award highlights a tremendous commitment to classic regional French cuisine at Bar Boulud, and that is something we are proud to be a part of.
With that in mind, we have selected seven excellent wines to pair with Chef Dieter’s award-winning Cassoulet this week at Bar Boulud. On Monday, we will kick off the week in style with Château Pontet-Canet’s Pauillac 1985 in magnum. This estate farms under biodynamic principles, still plowing the vineyards by horse, and of course, it does not hurt that Pontet-Canet is across the street from Mouton-Rothschild in Pauillac. The 1985 shows us the true possibility of Bordelaise wine, the capacity to age gracefully, with a real character of place, and an ever-present tension between power and finesse. With the deep flavors of the Cassoulet, this will be a special pairing that highlights the multi-layered depth of flavor found in the wine and the dish.
