A Venerable Burgundian August Week

I thought this week we’d dive straight into a few different takes on Burgundy – from an old-vine classic to a rising Beaujolais producer.

On Monday, we’ll pour some Gevrey-Chambertin out of Magnum. Gérard Seguin has a long familial tradition of making classically-fashioned Pinot Noir – dating all the way back to Alexis Seguin in 1850! By the 1970s, the Domaine had approximately 2.5 hectares; today they work 6.25. The velvety rusticity is magnified by the depth of the wine thanks to the very old vines that make their way into the cuvee. A perfect wine for the bistro fare of our restaurant.

For the mid-week, we’ll open a 3L of one of my favorite things in the world of wine: Aligoté. There is plenty of sub-par examples out there; most of these come from the modern clone Aligoté Vert. The greatest wines, however, come from the pre-clonal Aligoté Doré, and Sylvain Pataille in Marsannay is making four truly compelling single-site bottlings. For this week, we’re going to open ‘Les Champ Forey:’ .3 hectares of 55-year-old vines on soils with small limestone rocks. This is lithe and briny, with a stunningly deep complexity. Minerality leaps from the glass, and there is an electric texture. Snappy, fascinating stuff.

For the weekend, we’ll pour Domaine Chapel’s first vintage from their holdings in Chiroubles. David Chapel and Michelle Smith-Chapel founded the Domaine in 2016, and have been making juicy, delicious examples of Gamay ever since. Both are no strangers to NYC: Michelle worked as a sommelier for many years, and I had the pleasure of working with David at Boulud Sud for a time back in my bartending days! I really love the wines they’ve made, and am looking forward to cracking open these Double Magnums and trying out the 18s! Since it is August, and our food calls for it, we’ll keep the 3Ls slightly chilled, to add that little extra dimension. Hope to see you this week.
