As we settle into a more proper Fall, we always bring back some classic dishes. This week we relaunched the Coq au Vin and the Boudin Blanc – two proper, old-school French plates of robust, delicious quality.
This sort of fare and weather both call for the perfect marriage of rusticity and elegance: Red Burgundy. This week we’ll start with Magnums of Petitot’s Poisets with a little age, and then transition into the youthful but structured 2018 Gevrey-Chambertin from Ben Leroux, out of 6L. Should be a tasty week!
