Introducing: New Head Sommelier Victoria Taylor | 1/31 – 2/6/22

Choosing my first big bottle to pour for Panier proved difficult. The incredibly well-stocked cellar I’ve inherited has given me choice-overload anxiety. Do I open a favorite of mine, in celebration of my new role? Or do we open a tried-and-true classic? Something on theme for winter?

Thankfully, Jean Foillard’s Morgon Côte du Py checks all above boxes. A classic. Serious-but-not-self-serious Beaujolais that is both generous and grounded. A traditional pairing with Chef Daniel’s native Lyonnaise cuisine we serve and a cheery addition to Chef Vinny’s dishes (see: Fettucine with Rabbit Ragu and Black Trumpet Mushroom).
