Continuing our Bordeaux-themed Cassoulet Month!

Cassoulet month continues onwards, and our version is still as good as ever. It’s been a favorite of our guests to keep themselves warm in our outside “Château.” As for pairing with such a rich, rustic dish, there’s little more delectable than a good glass of Bordeaux.

After dabbling with a Melchior last week (biggest bottle yet at Bar Boulud!) I thought it would be fine to downsize (my shoulders agree) but to make up for that with a bit of age.

We’ll start the week with my last 6L Jero of d’Armailhac’s 2000 vintage – perfect elegance from a great year, that will still showcase particular freshness coming out of the big bottle.

For the weekend we’ll do a couple of second-labels. First, the Réserve de la Comtesse out of Magnums, with over 20 years of age! For Sunday Brunch I’ll open the last double-mag I have of Figeac’s “Petit-Figeac.”

All three are sure to be delicious and a wonderful match for the Award-Winning Cassoulet. Hope to see you soon!
