It’s certainly no surprise that we’ll feature Champagne all week long in honor of the arrival of 2020. I thought it would be fun to open a variety throughout the week, to really revel in the broad styles and textures that the region (and its great winemakers) has to offer.
For Monday, a one-off: Bérêche’s ‘Reflet d’Antan’ from Magnum. I have one of these kicking around, and I thought the perfect time to open it would be upon the Eve of New Year’s Eve. “Solera” method in style, this is always one of my favorite bottles of bubbles: rich & robust, with intense depth and clarity.
For NYE itself, we’ll go to Jeroboams of Billecart-Salmon Rosé: a classic needing little introduction. Proper with our bistro fare.
For the rest of the week, we’ll go back to Magnums, focusing on two Champagnes that are fabulous with food: Val Frison’s ‘Goustan’ and Suenen’s ‘C+C.’ The ‘Goustan’ is a Blanc de Noirs that focuses on ripe, spicy dark fruit, surrounding a savory, crushed mineral core. The Suenen is a Blanc de Blancs that is all lithe sea brine and chalky white flower lemon peel. Both are intense and characterized by impressive textures and long finishes. Though lovely alone, they can stand up to the richest of menus as well.
From all of us here at Bar Boulud, we wish you a Happy Holiday season and a blesséd New Year. May 2020 bring new joys and happiness. Santé!
