Restaurant Week at Bar Boulud

Please join us this week as we celebrate New York City’s Restaurant Week at Bar Boulud by opening one of our favorite rosé, Chateau de Roquefort’s Côtes de Provence ‘Corail’ 2017.

Situated in Provence, in the town of Roquefort-la-Bédoule, just behind the beloved seaside appellations of Cassis and Bandol, Château de Roquefort is making some of the best rosé in Provence today. Raimond de Villeneuve’s vineyards, shaped like an ancient amphitheater, are located at roughly 1,000 feet above sea level. Between the elevation and the proximity to the sea, the grapes are able to be harvested later with deeper phenolic ripeness, allowing for a rosé that is full of flavor, but also exhibits freshness, balance and restraint.

‘Corail’, a blend of biodynamic Carignan, Syrah, Cinsault, Clairette & Vermentino, is an irresistible wine for summer. Notes of white nectarine, fennel fronds and ocean air give way to the profound minerality on the palate. ‘Corail’ comes from the name for coral, something the winemaker finds in the color of the wine. Since a trip to Provence years ago, I often thought that the colors of the cliffs by the sea, as their shades shift and change with the sun throughout the day, can be found in the color of a great glass of rosé. A color that is at once salmon and brick, but also rust and peach, and certainly a color of summer.
